Potato keropok

我二嫂做的干蝦餅,她给我一大包帶来美国,我已在上個月炸光吃光光。Steve 很想做干蝦餅,因為他很喜歡我炸餅時,看着干餅在油鍋炸开,觉得很酷,但他又不喜歡蝦!我想了想,告訴他,你可用蔬菜代替蝦。” “那我要用馬鈴薯。馬鈴薯是他唯一喜歡的蔬菜。

我們記錄我二嫂告訴的材料做法,也上綱找到 prawn keropok 的食镨他開始興致勃勃的下手了將薯泥、茨粉、蛋、盬、糖、味精及水,混合做成条狀后。Steve買了許久的竹蒸籃,終於'開張'了!將它們蒸熟,凉后放進冰橱冷硬。冷硬后的成品很難切片,Steve 乘机又買了厨房用具,US$49.99的銷刀。切片后晒干或烘干,直到没水份,就可以炸了。這次輪到他自己炸餅了干餅在油鍋内炸开了

他吃着自己的作品,我也嚐吃看味道如何… Mmm…很好,不過我還是喜歡蝦味的。

Before coming to the US, my sister-in-law gave me a big package of home-made dried shrimp cakes (not yet fried.) Last month, I finished frying and eating them. Steve wanted to try to make them because he was interested to see the shrimp crackers ‘pop up’ when I was frying them…they are so cool. But he doesn’t like shrimp! I told him, “You can use a vegetable instead of shrimp.” “I want potato.” Potato is his favorite vegetable.

My sister-in-law told us the ingredients and how to make the crackers. We also searched for prawn keropok (cracker) recipes on the web. He felt anxious and started to make them… Mix the mashed potato, tapioca starch, egg, salt, sugar, white pepper, MSG and water. Roll them. Steve bought the bamboo steamer quite some time ago; it finally got its ‘opening day’. Steam until cooked and cool them, then put in the fridge to make them hard. They were hard and difficult cut into 2mm slices. So, Steve got a chance to buy new kitchen equipment again, this mandoline slicer’s price is US$49.99. After cut, sun or dehydrate until dry enough to fry them. This time he fried the crackers himself…the crackers pop up…

He is eating his home made food; I ate a cracker to see how the taste is… Mmm…tastes good. However, I prefer it with shrimp flavor.
