Scallop omelette

很久以前,我妈妈煮菜时,常会買lala(一种軟貝类)做为其中一道菜肴。有一次,大家都吃完晚飯后,还剩有不少的lala ,妈妈一时興致变通的,将lala当做‘oh chien’(蠔煎)炒出lala煎给我们夜宵。雖然我妈妈炒的lala chienoh chien相差很大,只見粘粘的薯澱粉不見蛋,但那时七十年代的我们吃得津津有味。有了第一次之后要是那晚餐有剩lala,我和姐姐就会动手除掉lala殼,等待粘粘的lala chien

Steve買的'Famous Street Food Of Penang'(槟城著名小食)介绍及食谱裡有‘oh chien’(蠔煎),勾引我想为自己炒來吃,嗯但没有蠔又没有lala,要做什么煎?有了!就做帶子煎

Long time ago, when my mom had to cook for our family she sometimes bought ‘lala’ (a type of clam) and cooked it as one of the dishes. Once, after all of us had finished dinner and there still some lala left, my mom thought about ‘oh chien’ (oyster omelettes or fried oysters, one of the hawker foods). She used that cooked lala instead of oyster to make a ‘lala chien’ (lala omelettes) for our snack. Even though there was a big difference between oh chien and my mom’s lala chien, which had much more tapioca flour than egg, we still thought it was yummy at that time (1970s). After that first time…if we saw ‘lala’ left after dinner, my sister and I would take them out of the shells and then wait for the sticky lala chien!

Steve bought a book called ‘Famous Street Food Of Penang’ with recipes, one of which is oh chien or oyster omelettes. It tempted me to want to cook it for myself. Hmmm…I have neither oysters nor lala…so what kind of omelette? Oh yes! Scallop omelette…
